"If you want a pretentious uppity club, there's plenty of those around. This is going to be intimate, warm and inviting," Andrus said, walking through the stone and wood-beamed clubhouse. A Valley celebrity in his own right, Executive Chef Eddie Matney recently joined the club and already is cooking up his gourmet fare in a temporary adobe bungalow on site. The club's restaurant and administration offices will move into the new clubhouse once completed. Matney's plan is to take the idea of country club dining -- often a roast beef sandwich and an iced tea -- to the next level. "I am really excited about this. I get to play with food again," Matney said, as he served a recent lunch of crunchy bacon corn chowder and a salmon-steak salad. "When we get up into the club, we're going to be doing a lobster bisque cappuccino," Matney said. "We haven't even started yet."
